These strawberry chocolate truffles are a mouthwatering sweet treat that can be whipped up in just an hour. These truffles can be a meaningful surprise to brighten someone’s day, showing them you care. A homemade treat has always been a wonderful gift to others, so this recipe allows a sweet treat to be made with three ingredients.
As I came across this recipe I realized how it only needed simple ingredients, easily found in any grocery store for convenience. As a person who enjoys baking, but not a professional, this recipe was perfect as something I could easily make in larger batches for friends.
These delectable rich truffles are covered in a thin layer of chocolate, with a chocolate strawberry filling. This twist on chocolate-covered strawberries, a classic dessert on Valentine’s Day, makes the truffles seem delicate and unique even though they are very simple to make. The sweet richness of these truffles makes you crave more as soon as you finish one.

- Ingredients:
1 cup (15g) Freeze dried strawberry slices - 2 cups (338g) white or milk chocolate (1 cup for the truffle, one cup for dipping)
- ⅓ cup (79ml) heavy cream
Instructions:
Step 1:
Line a baking sheet with parchment paper and set aside.

Step 2:
Add strawberry sliced to a food processor and pulse until it becomes a fine powder. (Crushing it with a rolling pin in a plastic bag works too, just make sure to double bag it!)
Step 3:
Add 1 cup of white chocolate chips (for milk chocolate) into a medium mixing bowl. Heat heavy cream in a small saucepan until it is just about to start simmering. (You can do this in the microwave as well.) Then, pour the hot heavy cream over the chocolate, and let it sit for about 1 minute. Gently stir with a spatula until the chocolate is fully melted and you have a smooth white batter. (If it is not completely melted, you can put it in the microwave for 15 seconds and stir again.)
Step 4:
Add the strawberry powder to the chocolate and stir until it is evenly mixed in.

Step 5:
Place the filling into the fridge to set in 1-2 hours.
Step 6:
Once the chocolate ganache is ready, roll the ganache between two pieces of parchment paper to about ½ and inch thick, and cut into your desired shape. (Try to work quickly so it does not melt) Then, place them onto the lined baking sheet.
Step 7:
Place the truffles into the freezer for about 15 minutes to completely freeze.

Step 8:
Meanwhile, add 1 cup of chocolate chips to a small microwave safe mixing bowl. Heat for 30-second intervals and stir in between until completely melted and smooth. If wanted, add 1 tablespoon of melted coconut oil to the chocolate to have thinner chocolate to coat the truffles in (this is optional).
Step 9:
Remove the truffles from the freezer and let it sit for about 5 minutes, to prevent the melted chocolate from solidifying.
Step 10:
Use two forks to dip each truffle into the melted chocolate, making sure to cover it completely. Gently shake off any extra chocolate and place the coated truffles back onto the lined baking sheet. If desired, drizzle the truffles with candy melts, sprinkles, or freeze dried strawberries.
