As the year comes to an end, EHS will have to say goodbye to the graduates of 2025. Throughout the years, these students have worked hard to be in the place they are today. As graduation comes nearer and goodbyes get closer, spending time with friends and family becomes just a little more important.
Often, people do not realize the impact the presence of a loved one creates until it becomes an absence. As some graduates leave for college, celebrate the good times and the successes. Although graduations appear to be a “goodbye” and a “good luck” for the future, they are also a celebration of the work accomplished throughout the years. Therefore, to celebrate and as a token of appreciation, The Eagle’s Eye gives a toast to the graduates and wishes them all the best in their future endeavors!
Planning a graduation party or celebration may be stressful, but these two summer drinks are easy and quick to make in large batches. The Pineapple Punch is a sweet and tart drink, perfect as a refreshment during parties. The punch has a light lime flavor with a tropical twist given by the pineapple concentrate. The strawberry mint fizz mocktail is a perfect drink for more fancy or sophisticated gatherings. Anyone can enjoy this delicious drink with a light mint aftertaste and strong strawberry flavor.

Pineapple Punch
Ingredients:
- 1 (12oz) can frozen limeade concentrate (do not add the water)
- 6 cups pineapple juice
- 2 liters Ginger Ale OR Lemon Lime Soda
- Fruit- we like pineapple pieces (orange slices, and lime slices)
Step 1: Keep the limeade concentrate, pineapple juice, and soda in the fridge for at least 4 hours. The cold allows the drink to stay bubbly longer.
Step 2: In a large pitcher or bowl, stir together the limeade concentrate and pineapple juice.
Step 3: Stir in the fresh fruit of your choice (I chose pineapple) and pour in the chilled soda right before serving. Stir the soda in gently and enjoy immediately.
Strawberry Mint Fizz
Ingredients:
- 1 cup strawberries
- 10 mint leaves
- 1-2 tsp sugar
- 1 cup crushed ice
- 6 oz club soda (sparkling water)
- 1 tsp lime juice
Step 1: Slice and smash the strawberries in a cup or bowl, and add the mint leaves and sugar.
Step 2: Add ice, club soda, and lime juice into a cocktail mixer and shake. (If you don’t have one like me, add it into a bowl or pitcher and mix well.)
Step 3: Garnish with strawberry slices and more mint. Enjoy immediately.
